Reddit got on a bandwagon about pickle salsa, and I had to try it. It is worth the time. My take goes more along the lines of roasted green salsas than the original instructions.
Ingredients
|
Amount |
Ingredient |
|---|---|
|
5 |
large jalapenos (or 3ish poblanos) |
|
2 |
serranos |
|
5 |
garlic cloves |
|
1 |
grip of cilantro |
|
1/2 |
onion in two quarters |
|
1 |
lime, juice plus zest |
Method
1. Heat oven broiler (the brits call it a grill) on high with rack at highest position
2. Broil onion, whole peppers, and garlic in skins for 10-15 minutes or until deeply charred
3. Cut tops of peppers off, peel garlic
4. Dump a jar of pickles (Claussen or Grillo’s if you have any respect for yourself) into the blender and pass the liquid through a strainer to catch the spices, and include the juice.
5. Put everything else in the blender
6. Blend to your preferred consistency and let sit for a few hours.
Notes
Probably omit salt until trying the finished salsa.
