Red Chile Sauce

A pretty standard chile sauce from Internet Shaquille. Use diluted in soups, meat fillings, etc.

Pequin, arbol, chipotle, etc.

1 tsp

each of oregano, cumin, salt

some

charred onion and garlic

Process

1. Toast peppers over medium high till fragrant, cut immediately
2. soften peppers 15m in boiling water
3. char half an onion and a few garlic cloves
4. add spices
5. blend till smooth, expect about 3C of extra water
6. strain
7. taste for salt
8. freeze in bags
